| Bhoona | A thoroughly garnished dish with garlic, onions, tomatoes and coriander to create a thick medium strength sauce. |
| Madras | Fairly hot soupy sauce with a hint of lemon juice. |
| Pathia | Hot, sweet and sour tomato flavoured sauce with finely chopped onions. |
| Rogan Josh | A medium thick sauce created with double quantities of tomatoes, finely chopped onions and garnished with fresh coriander. |
